Recipe: Arroz con Cebolla

Arroz con Cebolla is one of my favorite rice recipes! My husband and son also love it and I know you will too!

Do you know how I know you will love it? Because it has BACON! Everything with bacon is delicious, because bacon IS delicious!

The recipe for this Arroz con Cebolla is extremely easy! And you can add the bacon to the rice, inside, or use it as garnish like I used it this time because I was short on bacon haha!

Here is what you will need for 4 servings:

2.5 C. Uncooked White Rice (I used long grain)
1 Can (10.5 oz) French Onion Soup
1 Can (10.5 oz) Beef Consommé
Adobo Goya
Bacon to taste*
(You can use the bacon to garnish or add it to the rice. You will need the grease for the rice, but if you don't want bacon you can substitute the bacon grease for vegetable oil)

First of all, you need a rice cooker like this one to follow my recipe. :) They are not expensive and you can make arroz blanco, arroz guisado, arroz con maíz, arroz con gandules, arroz con cebolla... Translation? Any kind of rice :)

We will start by frying the bacon. Cook until crisp and set aside on a paper towel. Remember to reserve 1 tsp of bacon grease.

After the bacon is done, wash the 2.5 cups of rice with cold water, rinse until water comes out almost clear. Drain well and place in rice cooker. (I wash the rice in the rice cooker bowl and dry it really well before placing it inside the cooker)

Next add the onion soup and the beef consommé (the liquid level should measure at almost 3 cups)

Add a pinch of Adobo Goya and the bacon grease. Stir everything together, cover with lid and press the button to start the cooker.

When the rice cooker finishes cooking the rice, stir the rice trying to move the one from the bottom to the top. Cover again and let rest for 10 minutes.
Now it's time to crumble the bacon. At this point you can add it to the rice mix it together and then let sit for the 10 minutes, OR just add it after serving.

Try it and let me know how it turns out! :)
